Apart from their flavorful twists on classic American comfort food, unique cocktail blends, and fresh Stumptown coffee brewing up every morning, Peels is also master of ice cream. Chef Shuna Fish Lydon (pictured below) creates new flavors of frozen delights using only the freshest seasonal ingredients. She also collaborates with Peels mixologist Yana Volfson to create frozen drinks for the bar. We chatted over a cup of her Rhubarb-Hibiscus Sorbet & Labne-Honey Sherbert during the ice cream social last month, and she told me all about her process and love of ice cream. This lady rocks. And her ice cream is absolutely divine. I was also there to photograph their corn dogs for the Time Out hot dog article. Those spicy little bites packed a serious punch, much more fun than your average corn dog.
